Beef Chili

You need this
800g diced beef 3 yellow onions 5 garlic cloves, sliced 1 red chili pepper, sliced with seeds 2 bay leaves 1 tsp fennel seeds 1 tsp dried oregano 1 tsp smoked paprika 2 tsp ground coriander 2 tsp ground cumin 3 tbsp tomato paste 3 dl water 3 tbsp veal stock A pinch of salt, to taste 1 tbsp soy sauce
This is how you do it
- Trim the beef of any sinew and cut it into stew-sized pieces.
- Peel and roughly chop the onions and garlic. Rinse and slice the chili pepper.
- Heat oil in a pot and brown the beef until nicely seared. Add the onions, chili pepper, spices, and tomato paste. Sauté for another minute.
- Pour in the water and veal stock, ensuring the beef is covered. Simmer over medium heat for about 3 hours until the meat is tender and the chili has thickened. Season with salt to taste.
- Serve with crispbread on the side. Enjoy!
