Beef Chili

You need this

800g diced beef 3 yellow onions 5 garlic cloves, sliced 1 red chili pepper, sliced with seeds 2 bay leaves 1 tsp fennel seeds 1 tsp dried oregano 1 tsp smoked paprika 2 tsp ground coriander 2 tsp ground cumin 3 tbsp tomato paste 3 dl water 3 tbsp veal stock A pinch of salt, to taste 1 tbsp soy sauce

This is how you do it

  1. Trim the beef of any sinew and cut it into stew-sized pieces.
  2. Peel and roughly chop the onions and garlic. Rinse and slice the chili pepper.
  3. Heat oil in a pot and brown the beef until nicely seared. Add the onions, chili pepper, spices, and tomato paste. Sauté for another minute.
  4. Pour in the water and veal stock, ensuring the beef is covered. Simmer over medium heat for about 3 hours until the meat is tender and the chili has thickened. Season with salt to taste.
  5. Serve with crispbread on the side. Enjoy!
