Here's a quick and easy pesto pasta recipe.
You need this
Spaghetti 2 cups fresh basil leaves 1/2 cup grated Parmesan cheese 1/2 cup olive oil 1/3 cup pine nuts 2 garlic cloves, minced Salt and freshly ground black pepper Juice of half a lemon
This is how you do it
- Wash and thoroughly dry the basil leaves. Peel and mince the garlic cloves.
- In a food processor or blender, combine the basil leaves, toasted nuts, and minced garlic. Pulse a few times until coarsely chopped. Add the grated Parmesan cheese and pulse a few more times to combine.
- While the processor is running, slowly stream in the olive oil. Blend until smooth and well combined. If you prefer a thinner pesto, add a bit more olive oil.
- Taste the pesto and season with salt and freshly ground black pepper.
- Serve your homemade pesto immediately with spaghetti and enjoy together with Sigdal!
