Melon Salad with Feta & Mint

You need this

1 small watermelon 1 small bunch of fresh mint, chopped 150g diced feta cheese Salt and pepper, preferably flaky salt Olive oil 2 Sigdal Crispbread 1 lime

This is how you do it

  1. Slice the watermelon, remove the rind and any seeds, and dice the flesh. Slice the onion and chop the mint leaves.
  2. Grate the zest from 1 lime and squeeze the juice over the watermelon cubes. Add the diced feta cheese, lime zest, seasonings, and drizzle with olive oil.
  3. Transfer to a serving bowl, garnish with extra melon slices, mint leaves, crushed Sigdal crispbread, and grind some black pepper on top. Enjoy!
