Melon Salad with Feta & Mint
You need this
1 small watermelon 1 small bunch of fresh mint, chopped 150g diced feta cheese Salt and pepper, preferably flaky salt Olive oil 2 Sigdal Crispbread 1 lime
This is how you do it
- Slice the watermelon, remove the rind and any seeds, and dice the flesh. Slice the onion and chop the mint leaves.
- Grate the zest from 1 lime and squeeze the juice over the watermelon cubes. Add the diced feta cheese, lime zest, seasonings, and drizzle with olive oil.
- Transfer to a serving bowl, garnish with extra melon slices, mint leaves, crushed Sigdal crispbread, and grind some black pepper on top. Enjoy!
