Lemon Cauliflower with Feta This dish combines the earthy flavor of roasted cauliflower with bright citrus notes of lemon, the creamy tanginess of feta, and the freshness of coriander.

You need this

1 medium cauliflower 2 tbsp olive oil Zest and juice of 1 lemon 100g feta cheese, crumbled A handful of fresh coriander Sea salt Freshly ground black pepper

This is how you do it

  1. Preheat your oven to 200°C (390°F).
  2. Place the cauliflower florets on a baking sheet and drizzle with olive oil.
  3. Season with sea salt and freshly ground black pepper.
  4. Roast the cauliflower in the preheated oven for 20-25 minutes, or until the florets are tender and golden brown at the edges.
  5. Remove the cauliflower from the oven and transfer it to a large bowl.
  6. While the cauliflower is still warm, add the lemon zest and juice. Toss well to coat the florets evenly.
  7. Sprinkle the crumbled feta over the cauliflower and gently toss again.
  8. Add the chopped fresh coriander to the bowl and give it a final toss to combine all the flavors.
  9. Serve with some Sigdal on the side. Enjoy!
